In winemaking and brewing laboratories, the Dumas method is used to accurately analyze the nitrogen content of various samples.

In winemaking, an important element is the control of sulfur dioxide (E220), which is used as a preservative. The ISO 5522 (Wine, Determination of Sulfur Dioxide) and OIV (International Organization of Vine and Wine) standards regulate the permissible levels of sulfur dioxide in wine.
